Recipe 5: Chicken Parmesan

List of Ingredients:
• 1 zucchini (chopped)
• ½ pound chicken breast in 4 cutlets (Skinless and Boneless)
• 1 cup broccoli florets
• 1 tsp. light butter
• ½ tsp. olive oil
• ¼ tsp. dried basil
• ¼ cup parmesan cheese (grated)
• 3/8 cup Panko breadcrumbs (Whole Wheat)
• ¼ oregano (dried)
• ¼ parsley (dried)
• ½ tsp. (garlic powder)
• Pepper and salt to taste
• Cooking Spray

Preparation:
1. Preheat oven up to 375°F. Cover a 9×13-inch baking dish with spray.
2. Mix parmesan cheese with breadcrumbs, parsley, garlic powder, oregano, salt, pepper, and basil.
3. Apply butter (melted) on both sides of chicken cutlets. For coating, dip the cutlets in the breadcrumbs. Place it in the baking dish.
4. In a bowl, add chopped vegetables while adding olive oil. Add pepper, salt, and the breadcrumb mixture. Try to coat evenly. Insert them in the pan with chicken.
5. Bake around 35-40 minutes till chicken is done and cooked throughout.
6. Also, check vegetables for tenderness.
