List of Ingredients:
• 1 cup Pepper Jack cheese (shredded)
• 36 low-fat baked tortilla chips
• 14 oz. black beans (rinsed and drained)
• 2 scallions (sliced thinly)
• 2 plum tomatoes (chopped)
• 1 jalapeño pepper (deseeded and diced)
• 3 tbsp. cilantro (chopped)
• Lemon wedges
• Cooking spray
Preparation:
1. Preheat oven at 400°F.
2. Use foil to coat a baking sheet, grease with cooking spray.
3. Arrange tortilla chips on the baking sheet and sprinkle cheese over them.
4. Now, add the tomatoes, beans, scallions, and jalapeños over the tortillas and bake for 15-20 minutes till the cheese has melted.
5. Remove from oven.
6. Sprinkle and garnish with cilantro.
7. Serve with lemon wedges.
