6 eggs beaten

200 gram potatoes (quartered)

40 gram grated cheddar

100 gram asparagus

Rocket leaves

1 onion (chopped fine)

Cold salted water

Preparation:
1. Boil potatoes in cold salted water until tender
2. Add asparagus for a minute and then drain
3. Heat oil and add onion. Cook till soft approximately 8 minutes.
4. Mix eggs and half the cheese.
5. Pour the egg mixture all over the onions and then scatter over potatoes.
6. Top with rest of the cheese and put pan on grill for 5 about minutes or till golden brown.
7. Cut it into wedges and serve.
