Coco-Tapioca Bowl

Ingredients:
• ¼ cup tapioca pearls, small sized
• 1 can light coconut milk
• ¼ cup maple syrup
• 1 ½ tsp. lemon juice
• ½ cup unsweetened coconut flakes, toasted
• 2 cups water
Directions:
1 Place the tapioca in a saucepan and pour over the 2 cups of water. Let it stand for at least 30 minutes.
2 Pour in the coconut milk and syrup and heat the saucepan over medium temperature. Bring to a boil while stirring constantly.

Add the lemon juice and stir and then garnish with coconut flakes.
