Ingredients:
• 1 cup raw cashews
3 tablespoons coconut flour
• 1 tsp baking soda
• Salt, to taste
• ½ cup unsweetened almond milk
• 3 organic eggs
• ¼ cup coconut oil, melted
• 3 tablespoons organic honey
• ½ teaspoon organic vanilla flavor
• 1 cup fresh blueberries
Directions:
1 Preheat the waffle iron after which grease it.
2 In a mixer, add cashews and pulse till flour-like consistency forms.
3 Transfer the cashew flour in a big bowl.
4 Add almond flour, baking soda and salt and mix well.
5 In another bowl, put the remaining ingredients and beat till well combined.
6 Put the egg mixture into the flour mixture then mix till well combined.
7 Fold in blueberries.
8 In preheated waffle iron, add the required amount of mixture.
9 Cook for around 4-5 minutes.
10 Repeat with the remaining mixture.
