Ingredients:
Flour 2 cups
Salt ¾ teaspoon
Brown sugar ⅔ cup
Unsalted butter, melted ½ cup
Baking soda ½ teaspoon
Eggs 2
Vanilla extract, unsweetened 1 teaspoon
Baking powder ½ teaspoon
Mashed banana 1 cup
Sour cream ⅔ cup
Shredded carrot 1 cup
Shredded coconut, unsweetened 1 cup
Olive oil 1 tablespoo
Directions:
1. Set oven to 375 degrees F and let preheat, then take a 9 by 5-inch loaf pan and grease
with oil.
2. Take a medium bowl, add flour in it along with salt, baking powder, and soda and stir
until combined.
3. Place butter in another bowl, beat in sugar until creamy and then beat in banana, eggs,
vanilla, and sour cream until combined.
4. Fold in carrot and coconut until mixed, then add into the flour mixture and stir until
incorporated.
5. Spoon the batter into the loaf pan, then place it into the oven and bake for 70 minutes
or until inserted skewer into the bread comes out clean and the top is nicely golden
brown.
6. When done, take out bread from the pan, let it cool for 10 minutes and then slice to
serve.
