SPINACH AND BANANA SMOOTHIE

Makes 2–3 glasses
Preparation: 10 minutes
+ 1–2 hours chilling time
1 very ripe banana
1 small orange
1 small apple
2½ cups (75g) baby spinach
½in (1.5cm) piece of fresh ginger
juice of 1 small lemon
1 tbsp baobab powder (optional;
from a health food store
or online)
1 tsp moringa powder (optional;
from a health food store
or online)
½ tsp linseed oil
Peel the banana and the orange and coarsely chop. Peel the apple,
cut into quarters, remove the core, and chop roughly. Add all the fruit
chunks and the spinach to a food processer. Peel and finely grate the
ginger and add to the food processor with the lemon juice, baobab
and moringa powders (if using), and linseed oil. Blend the ingredients
until smooth, then pour in 16fl oz (500ml) water and mix everything
briefly once again. Decant into little bottles and chill for 1–2 hours.
Or you can chill it in a vacuum flask and serve 1 portion at a time.
TIP: A large green smoothie provides
you with vitamins and energy
for the whole day.
