Recipe 10: Red Pepper Chicken

List of Ingredients:
• ½ tbsp. light butter
• 1/8 cup onion (chopped)
• 1 clove garlic (minced)
• 7 ½ ounce roasted red peppers (canned, drained, chopped)
• ¼ tsp. red pepper (crushed)
• 1/8 cup basil leaves (chopped)
• ½ pound chicken breast
• 2 ounces fat-free cream cheese
• Salt and pepper to taste
Preparation:
1. Melt butter in the pan and add chicken.
2. Cook for 5 minutes and then remove chicken and keep aside.

Sauté garlic and onion with butter for 2-3 minutes.
4. Add peppers and sauté for 2 minutes.
5. Add cream cheese, crushed peppers, and broth and let it simmer for 10-15 minutes till cream cheese melts and sauce thickens.
6. Stir in basil and cook for 2 more minutes.
7. Season with salt and pepper.
8. Pour red pepper sauce over chicken and serve.
